ORANGE CARDAMOM OLIVE OIL CAKE

'Orange you glad we are zoom baking again?'

This time round we are making a cake!....She zesty, she delightful, she light, she flavoursome, she moist, she sweet, she packs-a-punch! (am I describing the cake or just every member of the 'Gang Girls'?....who knows!)

YOU'RE GONNA NEED THIS STUFF:

Cast Sug (2/3 cup)

2 Eggs

Salt

Extra-Virgin Olive Oil (1/3 Cup + 2 Table Spoons)

Vanilla Extract (essence is also acceptable)

Ground Cardamon (if you really don't like cardamom you can leave it out, but for me its absolutely essential and really makes the cake!)

2 Oranges (or one huge big boy)

Baking Soda 1/4 teaspoon (bicarbonate of soda) 

Baking Powder 1/2 teaspoon (remember this is different to soda, so get both)

Plain Flour (1/3 Cup + 2 Tablespoons

Icing Sugar (about 1/2 cup for dusting the cake at the end)

Other stuff you'll need:

Electric hand held mixer/beaters This is a MUST for this recipe! you can also use a stand mixer with the whisk attachment. If you don't have a hand held. If you don't have either ask your mum if she's got some hand mixers that you can surely lend.

1 small cake tin (i'm going to use an 8inch (20cm) round tin, but you can use whatever you'd like/have..though the smaller the better for this cake as its only quite a shallow, light cake. You could also use a small rectangle cake tin and cut it into slice squares.

Baking Paper

Large Mixing Bowl

Measuring Baking Cups

A small measuring jug (or something with a pouring spout that you can measure your oil into).

Microplane Grater (to zest your orange/s, you can also use the small hole spikey side of a classic 90's 4 side grater)

A Sieve (also quite essential for this cake but if you don't have one just make sure your flour is really free of any tiny lumps by mixing it with your dry hands in a big bowl or a dry whisk for a min or two before hand).

Cute apron (optional)

Alcoholic beverage and a good, fun attitude (essential)

CHUCKY'S CHOC CHIP LOCK DOWN COOKIES

YOU'RE GONNA NEED THIS STUFF:

Oats 50g (just over 1 cup) -just standard rolled breakfast oats, 'quick oats' are fine too.

Almond Meal 50g (just over 1 cup)

Plain Flour 125g (just under one cup)

Baking Soda 1/2 teaspoon (Bicarbonate of soda)

Baking Powder 1/2 teaspoon (yes you fool! this is different to baking soda, you're gonna need both if you want Dem perfect cookies)

Salt Flakes (I use sea salt, but you can use whatever salt flakes you want. This is for sprinkling on top so it's kinda optional...but they are so much better with that salty hit but you do you boo!)

Butter (Softened) 150g (not margarine, not nutalex or olive spread BUTTER! unsalted preferably, but salted is cool -whatever Trevor, if you forget to take your out of the fridge to soften don't worry you can do this in the microwave).

Brown Sugar 200g (1 + 1/4 cup)

1 egg

Vanilla Extract (essence is also acceptable)

Choc Chips OR chocolate chunks chopped up. (ima use dark cause I don't like my cookies crazy sweet but you can use whatever ya want!)

Make sure you have:

Baking Paper

Flat Baking trays (at least two)

A blender/magic bullet/smoothie maker/something to blend the oats up into a flour

Electric Beaters or a stand mixer (too cream the butter + sugar together. You can also do this by hand but you'll need some elbow grease and wrist strength so don't wank before hand).

Mixing Bowl

Cute apron (optional)

Alcoholic beverage and a good, fun attitude (essential)
